Farmacy. The idea of using fruits and vegetables to maintain and sustain your life. This idea is so difficult to follow when you have kids and want them to eat their veggies. I can’t even begin to tell you how many times I have put little green trees on my child’s plate hoping he would attempt to taste them. I searched and searched for a vegetable that he would like… and failed miserably. I became that mom that was sneaking spinach into my child’s waffle mix!!
It wasn’t until I saw these beautiful green flowers…. that I decided to try them.
Artichokes. These pretty little green flowers are packed with antioxidants and filled with vitamins. During cold and flu season, Artichokes are the way to go because they have tons of vitamin C. The best part about these prickly fibrous guys? My little man loves them!!!
After I trim and wash them, I steam them on the stove in salted water for a good hour. I season them with a little garlic powder and sea salt. My family likes to dip them in Earth Balance Vegan butter because we are dairy free but you can dip them in normal butter. I have even heard of people dipping them in mayo or lemon juice!
We have to try our best to keep our babies healthy!
